One of my favorite parts of this clear-the-slate detox/clean eating plan was discovering this recipe for Pumpkin Pie Smoothies. It's three ingredients. Takes about 90 seconds to make. And tastes like sunshine and laughter.
It's my go-to choice for breakfast or dessert, which in my book, is the same thing.
Pumpkin Pie Smoothies
3/4 cup Unsweetened Vanilla-Flavored Almond Milk
1/2 cup Pureed Pumpkin*
1 Frozen Banana
Blend together until smoothie is thick and creamy (about 90 seconds). Pour into a glass. Sprinkle on a bit of cinnamon.
Enjoy!
*If you're feeling a bit naughty, you can use canned pumpkin pie mix, which has a smidge of extra sweetness. Or you can make your own clean eating version by adding a few sprinkles of pumpkin pie spices to pureed pumpkin.

ReplyDeleteI, honestly, don't even notice the banana in it (except that it improves the texture by making it thicker). You'll lose some of the nutritional value, but you could try it with ice instead.
ReplyDeleteI absolutely love pumpkin. I can't wait to try this! If you go to Bend, try Emerald Smoothie's pumpkin flavor - I'm sure it's not as healthy, but maybe it could be a reward :-)

ReplyDeleteI love this! I use the regular pumpkin and add spinach (you don't taste it because the spices are so potent), flax seed, nutmeg and cinnamon! I'm thinking about trying chocolate protein powder! Thanks, sister :)
